berry smoothie pops

Around here, we fire up our Vitamix at least once a day, and usually quite a bit more during the summer months.  We make smoothies, slushies, banana or berry “ice cream” and other brain-freezing but healthy treats.  This is one we came up with recently and it’s a winner.  I’ve shown it as popsicles here, but it’s also great just as a smoothie.

Berry Smoothie Pops

Ingredients:

2 cups plain yogurt (we use homemade)

2 T chia seeds

1 scoop Raw Meal (optional; or any protein powder)

8 almonds, soaked overnight

4 large medjool dates, pits removed

1/4 cup shredded coconut

Dash cinnamon

1/4 cup water

Add ingredients to blender in order listed; blend well.

Next add 2 cups frozen berries–we use 1 cup strawberries and 1 cup mixed berries (blueberries, blackberries, and raspberries).  Blend.

Fill popsicle molds and freeze.  Makes about 10 pops.
