You have to make at least one pumpkin pie before October goes out, right?

It’s definitely pumpkin season at our house. Besides pies, it’s been pumpkin steamed and seasoned, mixed up in smoothies, devoured cold with sweet almond milk and spices. And…I admit…I even used the pumpkin guts. I was trying to find a tasty way to use the unhulled seeds, and discovered that raw seeds and pulp blended up with spices and lemon juice and cultured in a jar makes a tangy probiotic smoothie add-in. Yummy…and energizing!

I modified the pie recipe from my Nourishing Traditions cookbook, using freshly cooked pumpkin, coconut milk, and turbinado sugar. The crust is the Flaky Pie Crust recipe.

This was David’s pie; mine was crustless. Zia, somehow, doesn’t like pumpkin pie…but I’ll convert her before the year is over.
