happy thanksgiving!

We made our own little Thanksgiving dinner at home today. It was just the four of us, since Caleb is in New Mexico with his mom.

After a nice long snuggle in bed, (complete with a stinky diaper perched on our faces, dimply hands grasping at our noses, and plump feet stepping on our necks ) we went downstairs and David put the turkey on.

Cash is finally walking! Today he was tottering around the kitchen while we worked.

Zia made a paper turkey at story time yesterday. She wanted to stick it in the real turkey, but settled for sticking it in an apple instead. I have to smile when I remember this decoration she made a couple of Thanksgivings ago.

This man cooks a mean turkey. He brined it overnight and it came out so good–tender, juicy, and crispy-golden.

(My apologies to all you vegetarians out there.)

I made Mimi’s bread stuffing, mashed potatoes, and two versions of raw cranberry-fruit sauce. I also came up with some healthy quinoa stuffing that was pretty good.

Here’s my plate–well, my first plate. The gravy was the bomb. We made it with brown rice flour and extra drippings, then threw in the browned giblets at the end and simmered them until the flavor peaked. Yummy.

Cash ate turkey, potatoes, and cranberries for dinner. He was so tiny last Thanksgiving, and I remember holding him in the crook of my arm while we ate. Now he is Big Boy.

It was so fun to have our own little Thanksgiving again. Caleb was missing, but he will have plenty of leftovers to help us eat.

We cleaned the kitchen and I started a turkey bone broth, then we went for a walk.  The mountains were amazing in the setting sun.

I am thankful for so much–great kids, an awesome husband, a good, good God, and mountains out my front door.

    Gosh is that the view from your house Mia? Simply stunning, l could sit there and watch those mountains all day.

    Thanks, Chrisy! We can see those mountains from our house, but this view is from the road while we were walking. Happy Thanksgiving!
