Poco Mountain Girl

Caleb turned fourteen today.  His mom came up to spend his birthday and Mother’s Day in Boulder with him, so we had our birthday dinner last night.

He decided on Illegal Burger, which we’ve never been to before.  It was really good–he and David each got the Undercover Cheeseburger, Zia got the Little Illegal, and I had the Black Bean Vegan Burger.

Cash had fries with ketchup.  Yup.  I know–I’m such a good mama, always feeding my kids so healthfully.  Everyone but Cash and me had shakes with whipped cream.

The shakes nixed the need for a stop at 31 Flavors.  We all climbed into the car happy, full, and tired.

On the way home, it started snowing, then turned into a blinding blizzard.  It lasted just long enough for David to build a roaring fire when we got home, then out came the sun and blue skies.  It is May, after all–and this is our third snow since Thursday.  It’s getting just a tiny bit ridiculous, LOL.

I asked Caleb what he wanted for his birthday dessert.  He always comes up with something exotic that I’ve never heard of, and he didn’t fail me this time.  He asked for a red velvet cheesecake–a red velvet cake with cream cheese frosting and a cheesecake layer in the center.  With red velvet ice cream, which I didn’t even know existed.

With some trepidation, I started.  After three days of making different parts and putting them together, the cake is ready and waiting in the freezer for our birthday boy to dig into.
